I always do berry pies and peach pies in the summer when these fruit are in season but in the fall, apple pie is the best comfort food when the apples are fresh off the tree.  So I decided to try my standard healthy and delicious pie recipe using apples this time and I added some cinnamon to make this taste just like a traditional apple pie.

For the Crust:

Ingredients:
  • 2 cups of almonds
  • ½ cup of dates – soaked in water
  • Pinch of sea salt
Preparation:
  1. Soak dates in water for 10 – 15 minutes until soft.
  2. To make the pie crust, place almonds in a food processor until it forms a course flour.
  3. Remove the dates from the water and be sure to remove the pits from the dates.
  4. Add the dates and a pinch of salt to the almonds and process further.
  5. If the crust seems a bit too dry, add some of the date soaking water.
  6. Press the crust in a pie pan.

For the Filling:

Ingredients:
  • 5 or 6 cups fresh apples sliced into very thin pieces
  • 3/4 cup pitted medjool dates, soaked
  • 1 tablespoon fresh lemon juice
  • 1 tsp ground cinnamon
  • Pinch of sea salt
Preparation:
  1. Place 1 1/2 cups of apple slices along with the dates, lemon juice, cinnamon and a pinch of salt in a blender, and process until smooth.
  2. Transfer to a mixing bowl, add the remaining sliced apples and mix well.
  3. Pour the fruit filling into the crust and spread with a rubber spatula.
  4. Serve and enjoy!!!!
